Cheese, mustard, chicken and bacon, what could be a more iconic combination? It is so good your diners will be demanding seconds and thirds so make sure you have plenty spare.


Pre-heat your oven to 200C/fan 180C/gas mark 6. Tear the mozzarella ball into small pieces and mix together with the cheddar and mustard. Cut a slit into each chicken breast (careful not to cut all the way through) and stuff with the mixture.

Wrap each chicken breast with two rashers of bacon with the overlap underneath the breast (you may need to hold the breast together with a skewer or cocktail stick).

Season to taste and place the breasts on a baking sheet to roast for 20-25 minutes. For non-mustard lovers, simply swap the mustard for pesto for an Italian-style twist.

50g of grated mature cheddar

1 tbsp wholegrain mustard

4 skinless boneless chicken breast fillets

8 smoked streaky bacon rashers
