A healthy alternative to a greasy brunch and it tastes way better too.


Heat up your grill to a high temperature. Chop the cherry tomatoes in half and place, cut-side up, on a rack with the bacon to go under the grill for 10 mins, turning halfway through, until crispy.

Peel and stone the avocado and mash it with a fork until it resembles mushy peas and then squeeze the lime in with some chilli flakes and stir, season to taste.

Toast the bread, spoon on the avocado mix and roughly spread over the toast. Top with the tomatoes and then bacon and serve.

4 rashers of bacon, smoked or unsmoked, streaky or back, it’s your choice

6 cherry tomatoes

1 small ripe avocado

½ a lime

A pinch of dried chilli flakes

2 chunky slices of granary bread
